    Battle zucchini

Overwhelmed with zucchini? Some of us at the Herald and News are. One of our copy editors brought in a box of giant zucchini last week and put us to the test. I turned one specimen into four loaves of zucchini bread and a casserole and still had a significant amount left. That’s not counting the zucchini that ended up in my eyebrows. Luckily, the Herald and News is here to help. Each year we print recipes from readers. If you have a tasty favorite, send it to news@heraldandnews.com.

OIT gets new president

Christopher G. Maples

Friday, August 1, 2008 5:16 PM PDT
5 p.m., Friday, Aug. 1, 2008: Christopher G. Maples was appointed president of Oregon Institute of Technology on Friday. The State Board of Higher Education met in special session to confirm the recommendation by George Pernsteiner, chancellor of the Oregon University System.

Maples is executive vice president for research at Desert Research Institute in Reno. During his tenure at the Nevada school, Maples helped boost research funding from $26 million to $38 million annually. He begins at OIT on Oct. 1 with a $200,100 per-year salary through June 30, 2010.

Maples said he was attracted to OIT because of its mission and its history. “It has a unique niche in the Northwest,” he said, “and a great tradition of welcoming veterans back from World War II and preparing them for the work force.”

Congratulations to the Board of Higher Education for selecting Dr. Mapes! "
